Creamy overnight oats made with a grated apple, passion fruit, Greek yogurt and some crunchy mix-ins.
Recently, my microwave and I have been having some minor disagreements.
It started off when my microwave decided that frozen foods must be cooked as unevenly as possible, resulting in half the peas being overdone while the other half remained frozen. But this is par for the course when it comes to microwaves, so I wasn’t too concerned.
Next, the microwave started smoking whenever I tried to cook carrots. I’ve tried using different dishes (and none of them were metal, for obvious reasons), but more often than not, the inside of the microwave filled with smoke after 30 seconds of cooking those chopped carrots.
Lastly, a week ago I attempted to reheat some pumpkin (yes, I know it’s only August but my love for pumpkin will never die). Heating up the pumpkin was simple enough, but then I removed the Pyrex dish from the microwave, and put the lid on (only loosely) to keep the pumpkin warm while I prepared other things.
Bang!
Gaahh, what was that!?!
About a minute later, pumpkin exploded everywhere. And I mean everywhere. There was pumpkin on the table, pumpkin on several chairs, pumpkin on my hair, pumpkin on the floor… even pumpkin on the ceiling light.
My best guess is that the dish filled with steam, which couldn’t escape since I had covered it with the lid, resulting in too much pressure and a pumpkin explosion. But still, overreaction much?
Anyway, all of this has – at least momentarily – made me more wary of using the microwave. Meaning that overnight oats make more sense than ever.
(Hmm, sorry about that awkward segue).
The base of these overnight oats is made with grated apple, lots of yogurt, passion fruit pulp and either apple juice or milk (any type of milk is fine). Then we add plenty of shredded coconut, nuts and dried fruit for texture, additional passion fruit pulp for flavor, and some berries because they’re just so darn pretty.
If you have some flavored Greek-style yogurt sitting in your fridge, here’s a good place to use them. Since I usually find that flavored yogurts are way too sweet, I like using half plain Greek yogurt, and half a flavored one. Vanilla, passion fruit and berries yogurts are all welcome additions to this recipe.
Otherwise, good ol’ plain Greek yogurt works too (especially if you don’t have a sweet tooth). That being said, if your plain yogurt is quite tart (or you have a serious sweet tooth), then you may wish to add some honey or maple syrup to the overnight oats mixture. Alternatively, simply top your bowl of oats with a drizzle of honey or maple syrup.
One final thing to note: Since overnight oats are eaten cold, there’s no risk that they’ll explode in the microwave. Hooray!
- Overnight oats
- ⅔ cup rolled oats
- 1 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1 cup Greek-style yogurt
- ⅔ cup apple juice or milk
- 1 apple, coarsely grated
- 1 passion fruit
Mix-ins and toppings- ¼ cup shredded coconut
- ¼ cup chopped nuts or seeds
- 2 tablespoons dried fruit
- Passion fruit
- Berries
- In a bowl or container, combine the rolled oats, chia seeds, vanilla extract, yogurt and apple juice (or milk). Add the grated apple and the pulp from the passion fruit. Mix until completely combined.
- Cover the bowl with plastic wrap (or put the lid on the container) and leave in the fridge overnight.
- In the morning, stir approximately half of the shredded coconut, chopped nuts and dried fruit into the overnight oats. If the oats are too thick, also add a little more milk.
- Divide the oats between two bowls. Top with the remaining coconut, nuts dried fruit, as well as some passion fruit pulp and berries.
Plain, vanilla, passion fruit or berry flavored yogurt will work (I typically use a Greek-style vanilla yogurt). If your yogurt is quite sour, you may wish to add some honey to the overnight oats mixture.
